Chris and I have a long history of agriculture. I, in Kansas, grew up
with gardens, berries, fruit, and of course, wheat. Chris was involved all
over the world with tropical fruit and coffee. We both chose Palisade,
Colorado for its agriculture and beauty (he to grow and I to eat).
The orchards are a beautiful place in all seasons of the year. They not only provide the wonderful fruit, but also provide a home to our favorite hummers, a place to roam for the deer, and a place to take leisurely walks after a hard day's work. Nurturing baby apricots from bud to harvest is a very challenging and rewarding experience. The nights that we spent hours and hours with the wind machines running, protecting the baby fruits from frosts and freeze, are a wonderful memory.
A few years ago, we were perplexed as to how to use the excess apricots of the harvest and how to extend their delicious natural flavor throughout the year instead of only during “in season.” We tested various methods of drying and preserving. In 2006, when our local packing facility in Palisade installed a drying area, we continued our quest. We arrived at a very tasteful product.
Since this was right before the holiday season, all of our friends and associates became our taste testers of the delectable dipped dried apricots in the form of holiday gifts! Their response was exceptional so we started Après Cots Company in 2007. Après for the apricots “after the harvest”...
